SUPERBOWL CHAMPS!!!

THE GIANTS DID IT!!!!!!!!!!!! What a great way to end the football season and to finish off my last blog. I made 2 items yesterday since Ben and I decided to have a party for two.

Since it was Super Bowl Sunday, I decided to make a taco dip and wings.

I found the dip recipe on the Pinterest website. It led me to this site and I found an easy dip recipe - http://www.skinnytaste.com/2010/07/skinny-taco-dip.html

You will need: 8 oz less fat Philadelphia cream cheese, 8 oz reduced fat sour cream, 16 oz jar mild salsa, 1 packet taco seasoning, 2 cups iceberg lettuce (shredded), 2 large tomatoes (diced), 1 cup reduced fat shredded cheddar cheese and 2.25 oz black olives (I did not use olives) - I also did not use the low fat version for this recipe...so up to you what you want to do! 
In a large bowl combine cream cheese, sour cream, salsa, and taco seasoning.

Then mix well with an electric mixer.


Spread on the bottom of a large shallow glass dish. Top with shredded lettuce, tomatoes, cheese and olives. I made half of what the recipe called for since there were only 2 of us. I served with scoops. It was easier to serve with a spoon!


Now I know I just made wings last week, but this week I tried a different recipe using the crockpot instead. I adapted the recipe from this site - http://southernfood.about.com/od/chickenwings/r/bl104c18.htm 

Ingredients you will need include: 3 pounds chicken wings, salt and pepper to taste, 1.5 cups of bbq sauce, 1/4 cup honey, 2 teaspoons prepared mustard or spicy mustard and 2 teaspoons Worcestershire sauce (I did not have this in the house so I did not use it for the recipe).

Combine the bbq sauce, honey and mustard and mix together well. Pour the sauce over the wings.
Let cook on high 2-2.5 hours or low for 4-5 hours. Enjoy!


I have one other recipe I'd like to share, but I do not have pictures for this recipe. In trying to be healthy, we have begun to eat tilapia and wanted to find different ways to make it in the oven. I found a recipe online that was delicious - http://www.jerseybites.com/2007/09/tilapia-with-salsa-sauce/

You will need 1/4 cup salsa, 2 tablespoons mayo, 1/4 cup shredded parmesan. Mix all ingredients and pour over the fish. Bake at 425 for 20-25 minutes. Be sure to check that the fish is cooked through. You can also use this mixture on chicken as well!
