Week 3 - Mexican Potato Nachos!

I decided on this week's recipe because I had extra ground beef that I wanted to use. The recipe for Mexican Potato Nachos was the perfect fit!! I found the recipe here - http://allrecipes.com/Recipe/Mexican-Potato-Nachos/Detail.aspx?ms=1&prop25=93220341&prop26=DailyDish&prop27=2012-09-14&prop28=DailyRecipe&prop29=FullRecipe&me=1 - but changed it a bit. The recipe below is how I made the nachos.

Ingredients:

  • 2 tablespoons vegetable oil
  • 2 large baking potatoes cut into 1/2 inch thick slices
  • salt and pepper to taste
  • 1 tablespoon vegetable oil
  • leftover ground beef
  • 2 tablespoons taco seasoning
  • 2 tablespoons water
  • cheddar cheese
  • 1/4 cup shredded lettuce
  • tomato chopped - (I used 4 tomatoes from our garden!)

Preheat oven to 450 degrees F.

Pour 2 tablespoons of vegetable oil into a large bowl; toss the potato slices in the oil to coat.

Arrange the slices in a single layer on a baking sheet and sprinkle with salt and black pepper.

Bake in the preheated oven until the potato slices are golden brown, about 20 minutes.

While potato slices are baking, heat 1 tablespoon of vegetable oil in a skillet over medium heat; brown (or reheat) the ground beef in the hot oil, breaking it up into crumbles as it cooks, 8 to 10 minutes. Stir in the taco seasoning and water. Simmer until the flavors have blended.

Arrange the potato slices on a serving platter and sprinkle with Cheddar cheese. Top the potatoes with the meat and sprinkle with more cheese. Spread the lettuce out over the nachos and garnish with tomato.

Serve as an appetizer or meal and enjoy!! This would be a great recipe for entertaining company. It made a good amount of nachos and I only used 2 potatoes!

Stay tuned for next week's edition of Ben's Birthday Sunday Funday :)
